Xanthan Gum
Xanthan gum is a functional, versatile stabilizer used across the food and beverage industry as a workhorse ingredient. Personal care and other industrial applications also utilize Xanthan for its ability to add viscosity and cling. Working with a qualified xanthan gum supplier makes all the difference. There are several different grades with differences that include country of origin, overall texture, and dispensability.
Xanthan Gum Food Products
Xanthan gum serves two primary roles across food, beverage, and personal care applications.
Thickener – Xanthan gum is an excellent thickening agent and is used to provide a uniform viscosity in products including sauces, instant beverages and toothpaste.
Emulsifier – Its proven ability to bind moisture as well as maintain even distribution of droplets through suspension, makes xanthan gum a star ingredient for shelf stable beverages, sauces, salad dressings and certain personal care products.
Xanthan gum is an ideal ingredient in a number of finished foods, including:
- Salad Dressings and Sauces
- Beverages
- Desserts
- Batters
- Bakery Mixes
- Dry Mix Beverages
- Seasoning Mixes
- Dessert Mixes
Pectin vs Xanthan Gum
In many food applications, xanthan gum and pectin are used as equally effective thickening agents. Xanthan gum can serve as an effective replacement for pectin, though a blend of xanthan, inulin, and pectin often serves as the best formulation. Your Tilley representative can provide more insight on crafting suitable high-quality formulations to ensure excellent sensory acceptability and textural property.
Gellan Gum vs Xanthan Gum
Gellan Gum is similar to xanthan gum, however, functions much differently across applications. Both are polysaccharides and produced through bacterial fermentation. Gellan gum and xanthan gum are sometimes used together in certain applications to complement the slightly longer storage capabilities of Gellan gum with the versatile viscosity levels of xanthan gum.
Grades of Xanthan Gum Available
Xanthan gum is available in two different grades that are optimally suited to each application.
Cosmetic grade xanthan gum –Cosmetic xanthan gum has a lower micro count which leads to better stability. Xanthan gum is better suited than many similar ingredients due to its pH stability and resistance to temperature changes.
Food grade xanthan gum – Food grade xanthan powder has a higher micro count, though the exact number varies. In food applications, xanthan gum can be certified as gluten-free, organic, and will be tested for verification upon request.
Organic compliant xanthan gum must meet specific requirements that change based on the regulatory body. To ensure accurate labeling, please reach out to one of our technical representatives.
