Gellan gum and xanthan gum are sometimes used together in certain applications to complement the slightly longer storage capabilities of Gellan gum with the versatile viscosity levels of xanthan gum.

Grades of Xanthan Gum Available

Xanthan gum is available in two different grades that are optimally suited to each application.

Cosmetic grade xanthan gum –Cosmetic xanthan gum has a lower micro count which leads to better stability.  Xanthan gum is better suited than many similar ingredients due to its pH stability and resistance to temperature changes.

Food grade xanthan gum – Food grade xanthan powder has a higher micro count, though the exact number varies. In food applications, xanthan gum can be certified as gluten-free, organic, and will be tested for verification upon request.
